What it is
AssistiveTouch on Apple Watch uses the watch's accelerometer, gyroscope, and optical heart-rate sensor together with an on-device machine-learning model to detect subtle muscle and tendon movements — a pinch or a clench — and maps them to actions like selecting an item, opening notifications, or answering a call, letting the watch, and by extension a paired iPhone, be operated without touching the screen or crown.
